How to Tell if Meat Is Bad: Signs for Every Type of Meat

Clove AI Team·

Eating spoiled meat can cause serious foodborne illness including Salmonella, E. coli, and Listeria infections. Knowing how to tell if meat has gone bad is an essential kitchen skill. Here are the specific signs to look for with each type of meat.

General Signs That Apply to All Meat

Before we get into specifics, these red flags apply universally:

  1. Sour or ammonia-like smell: Fresh meat has a mild, slightly metallic scent. Any strong, sour, or ammonia odor means it is spoiled.
  2. Slimy or sticky texture: A thin film of slime on the surface is one of the earliest and most reliable signs of bacterial growth.
  3. Significant color change: While some color change is normal, dramatic shifts usually indicate spoilage.
  4. Expired well past the date: Use the sell-by and use-by dates as guidelines, especially for fresh meat.

Beef and Steak

Fresh beef should be:

  • Bright cherry red on the surface (or dark purplish-red in vacuum-sealed packages, which is normal)
  • Firm to the touch and spring back when pressed
  • Mild, slightly metallic smell

Bad beef will have:

  • Color: Gray, green, or brownish throughout (note: a slight browning on the surface of refrigerated beef is normal oxidation and is not a sign of spoilage if the meat smells fine)
  • Smell: Sour, rancid, or ammonia-like odor
  • Texture: Slimy, tacky, or sticky surface

Storage life: Ground beef 1-2 days in the fridge; steaks and roasts 3-5 days.

Chicken and Poultry

Fresh chicken should be:

  • Pink, glossy flesh
  • Very little odor (raw chicken should smell almost neutral)
  • Moist but not slimy

Bad chicken will have:

  • Color: Gray, green, or yellowish tinge (different from the natural yellow of some chicken breeds)
  • Smell: Strong, sour, or sulfur-like smell. This is the most reliable indicator for chicken.
  • Texture: Very slimy, especially after rinsing. If it is still slimy after washing, it is bad.
  • Appearance: Visible mold spots (rare but possible)

Storage life: Raw chicken 1-2 days in the fridge. Do not push this.

Pork

Fresh pork should be:

  • Pale pink to light rose color
  • Firm, slightly moist flesh
  • Mild scent

Bad pork will have:

  • Color: Gray, greenish, or dark brown patches
  • Smell: Sour, sweet-rotten, or ammonia smell
  • Texture: Slimy or tacky to the touch
  • Fat: Yellowed or rancid-smelling fat (fresh pork fat should be white)

Storage life: Ground pork 1-2 days; chops and roasts 3-5 days in the fridge.

Fish and Seafood

Fresh fish should be:

  • Shiny, metallic skin with tightly adhering scales
  • Clear, bright eyes (whole fish)
  • Firm flesh that springs back when pressed
  • Mild ocean or seaweed smell (fresh fish should not smell "fishy")
  • Bright red or pink gills (whole fish)

Bad fish will have:

  • Smell: Strong, pungent fishy or ammonia odor. This is the number one indicator.
  • Eyes: Cloudy, sunken eyes
  • Flesh: Mushy texture, leaves an indent when pressed
  • Color: Dull, milky, or discolored flesh
  • Gills: Brown or gray gills

Storage life: Fresh fish 1-2 days in the fridge. Use it quickly.

Cooked Meat

Cooked meat goes bad too. Signs to watch for:

  • Sour or off smell
  • Slimy texture
  • Mold spots (green, white, or black fuzzy patches)
  • Has been in the fridge for more than 3-4 days

When in Doubt, Throw It Out

This old saying exists for a reason. Foodborne bacteria like Salmonella and E. coli are invisible and odorless in the early stages. If you have any doubt about whether meat is safe, it is always better to waste a few dollars than to risk food poisoning.
